Broccoli rice is a forgiving recipe that’s easy to make. You can make it with a knife and cutting board or make it easier for yourself and use a food processor or blender if you have it! Broccoli has 5 grams of fiber and protein per CUP, making it an excellent swap for rice. It’s loaded with antioxidants and minerals and tastes great. Organic Ingredients: · Broccoli, 2 heads · Hemp Oil Note: 2 heads of broccoli will yield about 4-cups of broccoli rice. Recipe: 1. Decide how you are going to chop the broccoli. If you are using a knife and cutting board, you’ll want to chop it down to 1-inch pieces. From there, trying to keep the florets intact, chop down smaller into rice sized pieces. This way takes the longest but works very well. If you are using a food processor or blender, you will still cut the broccoli first into 1-inch pieces, and then pulse until they are the size of rice pieces. 2. Pre-heat a large skillet to medium heat and add hemp oil to the pan. Sautee the broccoli florets for about 2-4 minutes until they are slightly cooked. You want to make sure they remain their bright green color and some bite. Tip: These florets can also be baked as a sub in a casserole to make a dish instantly more nutritious!
