Tikka Masala Curry

Vegan Tikka Masala is so easy to make. "Chicken-style" tofu and a perfectly spiced, creamy sauce, this popular dish just got the best vegan makeover!

Organic Ingredients:

· 2 tbsp MCT or coconut oil

· 1 can full fat coconut milk

· 1/2 cup tomato puree

· 1 package non-GMO extra firm tofu, drained and cubed

· 3 cups cauliflower rice previously frozen

· 1 sliced onion

· 2 cloves garlic

· 1-inch fresh grated ginger

· Pink salt and pepper to taste

· 1/3 cup Ground Flax Seed

· 1 tbsp Garam Masala

· 1 tbsp ground cumin

· 1 tbsp ground coriander

· 1 tbsp paprika

· 1 tsp turmeric

· 1 tsp cayenne pepper


1. Heat oil in a pan on medium heat. Add in onion, garlic, ginger until onions are caramelized.

2. Add in spice blend, tomato puree and coconut milk. Stir until completely combined.

3. Add in cubed tofu and cauliflower rice.

4. Cover the pan and simmer for about 25 minutes.

5. Remove from heat and stir in ground flax seed and let it stand for 5 minutes as it thickens up and cools down.

6. Top with favourite garnishes.

7. Serve with a fresh green salad and enjoy!
